week one menus and shopping list and Recipes

Menu’s for Week One


Spaghetti, Green salad and french bread


Chicken tacos(soft shell) corn, sliced oranges


Chicken enchilada’s, green salad, mexican rice


Crock pot lasagna, green salad


Angel hair pasta with Chicken fruit of your liking.





Shopping list

1 lb of hamburger

6 chicken breasts

1 package angel hair pasta

1 head lettuce

salad dressing

tomatoes, cucumbers stuff for your salads

1 loaf french bread

small package soft taco shells. About 16 or so

1 can corn

3 oranges

1 large bottle salsa

1 packet of taco seasoning

cheese for tacos and enchiladas ( you might want to buy a big one for cheese sandwiches during the week)

1 small can enchilada sauce

1 pkg of mexican rice

Fruit of your liking for your pasta dish

lasagna noodles

italian seasoning (you will only have to buy this once)

8 oz cottage cheese

1 cup mozzarella cheese

parmesan cheese ( small amount)

Small bottle olive oil

3 carrots

garlic

1 bag frozen broccoli florets

1 can chicken broth


Also get what you need for breakfast and lunch...I think you can handle that.

Remember things like

bread, milk, butter, eggs, juice, cereal, peanut butter, jam...ok




Mexican Chicken recipe for taco’s and burritos


1 lb chicken breast (4 )

1 cup salsa

1 pkg taco seasoning mix

let this go in the crock-pot for 4-5 hours. Stir with a fork to shred.



You can use this meat in soft shelled tacos with lettuce and tomatoes and salsa







Mexican Burritos


Take the left over meat and roll that and the left over rice and cheese into the soft taco shells and put them in a pan

cover with enchilada sauce and cheese. Put it in your freezer or fridge depending on when you will be eating it.


Bake on 350 for about 1/2 hour if thawed about 1 hour if frozen



Crock Pot Lasagna


Yep, you can make lasagna in the crock pot! Love this during the summer when the last thing I want to do is turn on my oven and escalate the temperature inside my already super hot house.

This recipe is from Relief Society.


Lasagna in the Crockpot

-8 lasagna noodles, uncooked

-1 lb ground beef, turkey whatever

-1 tsp italian seasoning ( I just put as much in as I feel like)

-28 oz jar spaghetti sauce

-1/3 cup water

-15 oz cottage cheese

-2 cups shredded mozzarella cheese (I throw in a bit of parmesan also)


Grease your slow cooker. Break noodles and place half in the bottom. Brown meat and drain. Stir italian seasoning into meat. Spread half of meat over noodles. Layer half of sauce and water, half of cottage cheese, and half of shredded cheese over meat. Repeat layers. Cook on low for 5 hours.


Angel Hair Pasta with Chicken


My kids aren't big on tomato sauce, so here is a vegetable-based pasta they love.


4 T. olive oil, divided

1-2 chicken breasts, cut in pieces

¾ cup sliced carrots

1 t. minced garlic

1 bag frozen broccoli florets, thawed

¾ c. chicken broth

½ c. parmesan cheese

1 lb. angel hair pasta


Heat 2 T. olive oil in skillet over medium-high. Add chicken, stirring until cooked through. Drain on paper towels and keep warm.Start water boiling for pasta.Add remaining olive oil to skillet. Cook carrots 3 minutes. Add broccoli and garlic, cook 2 more minutes.Cook pasta as directed on the package.Add broth, chicken, and cheese to vegetable mixture. Simmer on low until pasta is ready.Mix pasta and chicken-vegetable mixture together, sprinkle with freshly grated parmesan cheese and serve immediately.
