Week 3 menus, list, and recipes

Menu’s for week 3


Sloppy Joes, carrot sticks, celery sticks, chips

Chicken pillows,( this recipe will make enough for some lunches) apple slices

Hawaiian Hay stacks

Chicken Alfredo, garlic buns, green salad

Hamburgers, carrot sticks, celery sticks and chips


Shopping list

1 Can Manwich

2 lbs hamburger

1 8 pk. hamburger buns

6 carrots

2 pkg. of celery

1 green pepper

potato chips

8 chicken breast

2 cans of chicken or 2 more breast (depends of how much time you have on the Hawaiian Haystacks night)

2 bunch green onions

1-3oz pkg. cream cheese

2 pkg crescent rolls

2 can cream of chicken soup

dried bread crumbs ( you should have this left from a previous week)

2 cans chicken

Rice (small bag of long grain rice)

1 Can Chow mein noodles

1 small can pineapple chunks

1 cup cheddar cheese.

1 bottle Alfredo sauce

1 pks of fun noodles for chicken alfredo

1 head lettuce

mustard

ketsup

pickles if you want them

tomatoes if you want them



Sloppy Joes


1 can manwich

1 lb hamburger

buns



Chicken Pillows


4 chicken breasts

3-5 green onions chopped

1 - 3 oz pkg. cream cheese

1 celery, diced

1 pkg. crescent rolls

1 can cream of chicken soup

1/4 can of chicken broth

1/2 can of milk

corn flakes or dry bread crumbs


Boil chicken breasts, reserve boiled chicken broth. Debone chicken; chop into bite-sized pieces. In small pan, saute onion and celery in butter; melt cream cheese into mixture. Remove from heat; add chicken. Roll out crescent rolls flat, put 1 TBSP chicken mixture in center; roll up. Roll in melted butter; then roll in cornflakes or bread crumbs. Bake 15-20 minutes. combine soup, broth and milk into sauce. Serve sauce over rolls.




Make hamburgers this same week to use up the buns. Freeze the rest for garlic bread toast.


Hawaiian Hay Stacks


1 can cream of chicken soup

1/2 cup of chicken broth or water

2 cups chicken cooked and cubed ( approx 2 - 3 large chicken breasts)( or 2 cans of chicken)

2 C cooked long grain rice (put 1/2 cup rice 1-1/2 cups boiling water and boil for about 10 min till done)

1 can chow mein noodles

1/2 cup chopped celery

1 chopped green pepper

1/4 cup chopped green onion

1 small can pineapple chunks, drained

1 C. grated chedar cheese

You can put in slivered almonds coconut and pimiento but I don’t think your budgets will allow


Combine soup and chicken broth in saucepan. Add chicken an simmer 8-10 minutes until heated through. On serving plates layer all ingredients. First, stack rice, chow mein noodles, chicken and gravy. Add Celery, green peppers and green onion. Top with pineapple chunks, grated cheese and more chicken and gravy if desired.


Chicken Alfredo


One bottle Alfredo sauce

2 grilled or fried boneless chicken breasts sliced

pasta


grill or fry your chicken. Season with salt and pepper and whatever else sounds good

Heat up your sauce and place sliced chicken breast in.

Serve over warm pasta.

Kate’s Meatloaf, baked potatoes, green beans, bottled peaches

Easy Beef stroganoff, Green salad

Feta Chicken Bake, frozen broccoli left from week 1, packaged rice ( cook 3 chicken breasts and save one for the pizza recipe)

Chicken Feta Pizza bake, Green Salad

Baked Pesto Chicken, rice, fruit of your choosing


2 lbs hamburger

2 onion

1 can cream of mushroom soup

1 pkg dry onion soup

1 sm carton sour cream

1 pkg egg noodles ( save half for the next time you make this)

celery

green pepper

red pepper

1 head lettuce

2 tomatoes

carrot...more if you want to eat them for lunch

ketsup

bread crumbs (italian)( if you have dried out bread you can put them in a blender and make your own)

1-1/2 Cup parmesan cheese

Italian seasoning ( you should have this left from week one)

garlic salt

2 potatoes

1 can green beans

bottled peaches (get these from home)

frozen or fresh broccoli ( see if you have some left from week one)

2 packages of rice

2 lemons

2 containers feta cheese

5 boneless chicken breasts

One pizza crust ( look by the pillsbury dough)

olive oil (you might have this from week one)

2 cup mozzarella

fruit for dinner one night

1 jar pesto sauce

Kate's Meatloaf

(From Jon & Kate plus 8, I saw them do this recipe on Good Morning America or something, I found it appealing because of all the vegetables she hid in the loaves. I made this last night, we had some friends over and we all gobbled it up! If you don't have a food processor you can use a different cool chopping device, or just a knife. :)

Makes 5 slices


Ingredients:

1 pounds organic ground beef

2 eggs

Finely chopped (I use food processor on pulse) celery, onion, green pepper, carrots- about 1/4-1/2 cup of each.

About 1½-2 cups of breadcrumbs- Italian seasoned if on hand. Otherwise, plain works too. May need more breadcrumbs depending on the consistency of the meatloaf.

About 3/4 cup shredded or grated Parmesan cheese (which ever is on hand).

About ¼ to ½ cup ketchup.

About 2 teaspoons of Italian seasoning

About 1 teaspoon of garlic salt


Mix all the ingredients together in a large mixing bowl place in loaf pan. Add a squirt of ketchup to the top of each in a zig-zaggy design. I cover with foil and bake in either a meatloaf pan or a bread baking dish at 350 degrees for about an hour (depending on oven) or until bubbly and center is no longer pink.During the last 15 minutes or so, I remove foil covering and finish baking uncovered. Serve with ketchup, yum!

Easy Beef Stroganoff

Easy and Fast Dinner - and yummy to the tummy!


Ingredients

  • 1 lb. round steak or hamburger
  • 1 onion chopped
  • 1 c. water
  • 1 can cream of mushroom soup
  • 1 pkg. dry onion soup
  • 1 sm. carton sour cream
  • noodles or rice

Steps

  1. Trim excess fat from steak and cut steak into bite size pieces.
  2. Cook Beef and onion in small amount of oil until brown.
  3. Drain drippings from meat.
  4. Add water and soups and simmer until meat is tender.
  5. Add sour cream and simmer 5 minutes.
  6. Serve over noodles or rice.

Feta Chicken Bake


This goes really well with the Greek Salad I posted. It is easy and looks impressive.


2 Boneless, skinless chicken breast halves

2 lemons, quartered

salt

pepper

feta cheese

diced red pepper

diced fresh parsley


Preheat oven to 350. Arrange chicken in 13x9-inch baking dish. Drizzle both sides with one of the lemons. Season with salt and pepper. Top with feta cheese; drizzle with remaining lemon. Bake for 35-40 minutes. Sprinkle with red pepper and parsley before serving. Serve with Greek Salad and rice


Chicken Feta Pizza


1 pizza crust

1 tablespoon olive oil

1 cup mozzarella, shredded

cooked chicken, sliced

1-2 tomatoes, chopped

Feta cheese


Sprinkle the toppings on the pizza in this order: olive oil, half the mozzarella, chicken, tomatoes, feta, remaining mozzarella. Bake at 450 degrees for 15-20 minutes.


Baked Pesto Chicken


This recipe is from Val. We made it for 35 on Christmas Eve and everyone seemed to love it!


  • Skinless, boneless chicken breasts, one per person
  • Jar of pesto sauce, may need two jars if you make as much as we did
  • Shredded mozzarella cheese
  • parmesan cheese

Pour some pesto sauce in separate bowl so it doesn't get contaminated with chicken juices. Partly slice open chicken and spread 1 teaspoon pesto inside, followed by 2 tablespoons mozzarella and 1 tsp. parmesan. Fold top of chicken back over and spread 1-2 tablespoon pesto sauce over the top of the chicken.

Bake 20-25 min. at 350 until no longer pink inside. Top with sliced tomatoes (we used canned) and 2 tab. mozzarella sprinkled on top of each chicken breast. Bake 3-5 min. more until cheese is melted.

Alternative directions: Pesto, cheeses can be mixed together and spread on top of each breast, when done add tomatoes and mozzarella.

This is a good company dish as it looks very festive and special.

Shopping list

1 lb of hamburger

6 chicken breasts

1 package angel hair pasta

1 head lettuce

salad dressing

tomatoes, cucumbers stuff for your salads

1 loaf french bread

small package soft taco shells. About 16 or so

1 can corn

3 oranges

1 large bottle salsa

1 packet of taco seasoning

cheese for tacos and enchiladas ( you might want to buy a big one for cheese sandwiches during the week)

1 small can enchilada sauce

1 pkg of mexican rice

Fruit of your liking for your pasta dish

lasagna noodles

italian seasoning (you will only have to buy this once)

8 oz cottage cheese

1 cup mozzarella cheese

parmesan cheese ( small amount)

Small bottle olive oil

3 carrots

garlic

1 bag frozen broccoli florets

1 can chicken broth


Also get what you need for breakfast and lunch...I think you can handle that.

Remember things like

bread, milk, butter, eggs, juice, cereal, peanut butter, jam...ok




Mexican Chicken recipe for taco’s and burritos


1 lb chicken breast (4 )

1 cup salsa

1 pkg taco seasoning mix

let this go in the crock-pot for 4-5 hours. Stir with a fork to shred.



You can use this meat in soft shelled tacos with lettuce and tomatoes and salsa







Mexican Burritos


Take the left over meat and roll that and the left over rice and cheese into the soft taco shells and put them in a pan

cover with enchilada sauce and cheese. Put it in your freezer or fridge depending on when you will be eating it.


Bake on 350 for about 1/2 hour if thawed about 1 hour if frozen



Crock Pot Lasagna


Yep, you can make lasagna in the crock pot! Love this during the summer when the last thing I want to do is turn on my oven and escalate the temperature inside my already super hot house.

This recipe is from Relief Society.


Lasagna in the Crockpot

-8 lasagna noodles, uncooked

-1 lb ground beef, turkey whatever

-1 tsp italian seasoning ( I just put as much in as I feel like)

-28 oz jar spaghetti sauce

-1/3 cup water

-15 oz cottage cheese

-2 cups shredded mozzarella cheese (I throw in a bit of parmesan also)


Grease your slow cooker. Break noodles and place half in the bottom. Brown meat and drain. Stir italian seasoning into meat. Spread half of meat over noodles. Layer half of sauce and water, half of cottage cheese, and half of shredded cheese over meat. Repeat layers. Cook on low for 5 hours.


Angel Hair Pasta with Chicken


My kids aren't big on tomato sauce, so here is a vegetable-based pasta they love.


4 T. olive oil, divided

1-2 chicken breasts, cut in pieces

¾ cup sliced carrots

1 t. minced garlic

1 bag frozen broccoli florets, thawed

¾ c. chicken broth

½ c. parmesan cheese

1 lb. angel hair pasta


Heat 2 T. olive oil in skillet over medium-high. Add chicken, stirring until cooked through. Drain on paper towels and keep warm.Start water boiling for pasta.Add remaining olive oil to skillet. Cook carrots 3 minutes. Add broccoli and garlic, cook 2 more minutes.Cook pasta as directed on the package.Add broth, chicken, and cheese to vegetable mixture. Simmer on low until pasta is ready.Mix pasta and chicken-vegetable mixture together, sprinkle with freshly grated parmesan cheese and serve immediately.
