Week 2 menu’s and shopping list


Kate’s Meatloaf, baked potatoes, green beans, bottled peaches

Easy Beef stroganoff, Green salad

Feta Chicken Bake, frozen broccoli left from week 1, packaged rice ( cook 3 chicken breasts and save one for the pizza recipe)

Chicken Feta Pizza bake, Green Salad

Baked Pesto Chicken, rice, fruit of your choosing


2 lbs hamburger

2 onion

1 can cream of mushroom soup

1 pkg dry onion soup

1 sm carton sour cream

1 pkg egg noodles ( save half for the next time you make this)

celery

green pepper

red pepper

1 head lettuce

2 tomatoes

carrot...more if you want to eat them for lunch

ketsup

bread crumbs (italian)( if you have dried out bread you can put them in a blender and make your own)

1-1/2 Cup parmesan cheese

Italian seasoning ( you should have this left from week one)

garlic salt

2 potatoes

1 can green beans

bottled peaches (get these from home)

frozen or fresh broccoli ( see if you have some left from week one)

2 packages of rice

2 lemons

2 containers feta cheese

5 boneless chicken breasts

One pizza crust ( look by the pillsbury dough)

olive oil (you might have this from week one)

2 cup mozzarella

fruit for dinner one night

1 jar pesto sauce

Kate's Meatloaf

(From Jon & Kate plus 8, I saw them do this recipe on Good Morning America or something, I found it appealing because of all the vegetables she hid in the loaves. I made this last night, we had some friends over and we all gobbled it up! If you don't have a food processor you can use a different cool chopping device, or just a knife. :)

Makes 5 slices


Ingredients:

1 pounds organic ground beef

2 eggs

Finely chopped (I use food processor on pulse) celery, onion, green pepper, carrots- about 1/4-1/2 cup of each.

About 1½-2 cups of breadcrumbs- Italian seasoned if on hand. Otherwise, plain works too. May need more breadcrumbs depending on the consistency of the meatloaf.

About 3/4 cup shredded or grated Parmesan cheese (which ever is on hand).

About ¼ to ½ cup ketchup.

About 2 teaspoons of Italian seasoning

About 1 teaspoon of garlic salt


Mix all the ingredients together in a large mixing bowl place in loaf pan. Add a squirt of ketchup to the top of each in a zig-zaggy design. I cover with foil and bake in either a meatloaf pan or a bread baking dish at 350 degrees for about an hour (depending on oven) or until bubbly and center is no longer pink.During the last 15 minutes or so, I remove foil covering and finish baking uncovered. Serve with ketchup, yum!

Easy Beef Stroganoff

Easy and Fast Dinner - and yummy to the tummy!


Ingredients

  • 1 lb. round steak or hamburger
  • 1 onion chopped
  • 1 c. water
  • 1 can cream of mushroom soup
  • 1 pkg. dry onion soup
  • 1 sm. carton sour cream
  • noodles or rice

Steps

  1. Trim excess fat from steak and cut steak into bite size pieces.
  2. Cook Beef and onion in small amount of oil until brown.
  3. Drain drippings from meat.
  4. Add water and soups and simmer until meat is tender.
  5. Add sour cream and simmer 5 minutes.
  6. Serve over noodles or rice.

Feta Chicken Bake


This goes really well with the Greek Salad I posted. It is easy and looks impressive.


2 Boneless, skinless chicken breast halves

2 lemons, quartered

salt

pepper

feta cheese

diced red pepper

diced fresh parsley


Preheat oven to 350. Arrange chicken in 13x9-inch baking dish. Drizzle both sides with one of the lemons. Season with salt and pepper. Top with feta cheese; drizzle with remaining lemon. Bake for 35-40 minutes. Sprinkle with red pepper and parsley before serving. Serve with Greek Salad and rice


Chicken Feta Pizza


1 pizza crust

1 tablespoon olive oil

1 cup mozzarella, shredded

cooked chicken, sliced

1-2 tomatoes, chopped

Feta cheese


Sprinkle the toppings on the pizza in this order: olive oil, half the mozzarella, chicken, tomatoes, feta, remaining mozzarella. Bake at 450 degrees for 15-20 minutes.


Baked Pesto Chicken


This recipe is from Val. We made it for 35 on Christmas Eve and everyone seemed to love it!


  • Skinless, boneless chicken breasts, one per person
  • Jar of pesto sauce, may need two jars if you make as much as we did
  • Shredded mozzarella cheese
  • parmesan cheese

Pour some pesto sauce in separate bowl so it doesn't get contaminated with chicken juices. Partly slice open chicken and spread 1 teaspoon pesto inside, followed by 2 tablespoons mozzarella and 1 tsp. parmesan. Fold top of chicken back over and spread 1-2 tablespoon pesto sauce over the top of the chicken.

Bake 20-25 min. at 350 until no longer pink inside. Top with sliced tomatoes (we used canned) and 2 tab. mozzarella sprinkled on top of each chicken breast. Bake 3-5 min. more until cheese is melted.

Alternative directions: Pesto, cheeses can be mixed together and spread on top of each breast, when done add tomatoes and mozzarella.

This is a good company dish as it looks very festive and special.
